Recipe: slow cooker potato and ham soup




1 pint chicken broth
6-8 chopped red potatoes (enough to fill the broth and stick out a little from the liquid before other ingredients are added)
2 carrots peeled, chopped
2 celery sticks chopped
1 small onion, chopped
2 cups chopped cooked ham
1/2 tsp each: dried parsley, salt, pepper

1 cup shredded cheese (colby jack or mild cheddar)
1 cup whole milk
2 double handfulls of kale, broken up, no stems

Put first set of ingredients into slow cooker and cook for 3 hrs on high.  Lightly smash with a smasher. Add last three ingredients, cook until hot again.  EAT.  Mmmmm

That sounds tasty. I have a ham bone (ham attached) that needs something to do, and this could be it.

Hey, do you want the leftover uncooked kale? I'm totally not gonna have a use for it before it goes bad and it was a big bunch.

Have you thought about cooking up the kale and blending it into mashed potatoes? It makes really cool green "Irish" mashed potatoes. Hee hee! Or saute it, thinly sliced, with garlic and a bit of oil, Brazilian style. Mmmm. If you don't want to do that, though, then sure I'll take some kale. :)
