I've made this like 5 times since Christmas, so I thought I'd share the recipe.
1 head cauliflower (cut into pieces)
1/2 onion (chopped)
2 T margarine
2 T all-purpose flour
1 cup milk
1-4 t curry powder
1.5 cups shredded cheese (aged or sharp)
Sprinkles of Italian
Boil Cauliflower and onion in a little water, just until a little soft. Pour off water and move to an oven-safe dish.
In a small skillet, melt the margarine until bubbly. Stir in the flour and then the milk. Reduce heat and add curry powder and 1 cup of the cheese. Pour over the cauliflower and mix just a little. Top with remaining cheese and bread crumbs.
Bake at 350 for 15 minutes. Serve and eat.
It's also great if you cook it longer and add the water back at the end to make a soup.
