1/2 pkg "taste of thai" yellow curry base

1 can coconut milk

1 red onion, sliced verticle
1 red pepper, sliced verticle
---------------------
1/2 lb chicken, sliced against the muscle grain

1tbsp fish sauce
1tbsp brown sugar
1/8-1/4 cup lime juice

1/4 cup cilantro, thai basil or sweet basil
1pc fresh ginger, the size of the last joint of your thumb, peeled and sliced against the grain

pre-slice and prep everything. the dashed lines are what gets added at the same time, so don't mix the bowls.
pour about 1/8 the can of coconut milk into the wok with the curry base. heat it up, stir stir, let the curry melt. add the rest of the coconut milk. stir it good.
add peppers and onions. let milk boil for about 8 mins. stir it lots.
add chicken. more stiring. boil 8 mins.
add fish sauce, lime and brown sugar. boil 3 mins
cut open a pc of chicken and make sure it's done.
add greens and ginger, stir, remove from heat.
serve with rice noodles.

Was considering leaving it as a comment to oneof his lj posts, but thought some other people might like it.
Gotta start wearing gloves when i spar with rant. got three scraped knuckles, bruised thumbnail-bed and a crazy-deep blister. makes the typing hard.

Anyway, the curry paste is pretty much "canned," it just doesnt have the coconut to give it liquidity (if that's not a word, it should be). I'm working on making my own paste, but it's a hard quest for some of the ingredients.
