Unfortunately I don't know of any charts showing the whump - somebody should get on to creating that essential resource! :P However, I did come across this and this which probably won't be of any use but were interesting and did make me go 'OOhhh, I'd forgotten about that' a few times. And then I came across this video which was full of stuff I hadn't seen but could be good inspiration for whump(I'm going to assume you've seen S4 - I hadn't realized that was what it was before I started!)
It's looking like Relativity1953 on LJ is tackling the project, which is pretty awesome.
We're still mid-season 4, so I'll hold off on watching the vid. Not that I"m spoiler-phobic, but I'm so close to those episodes anyway. We just watched the one with the carnival and the kidnapping and damn, Eliot gets wrecked in that one.

I think the video shows things sufficiently out of context that what I have gleaned is that Eliot gets into a lot of fights during the rest of the series and hey, you told me the same thing. After three seasons of Leverage, I'd kind of worked out that much *grin*
