Jan. 4th, 2007 06:12 pmJanelly's Chicken with Black Beans and Southern Veggie soup
Makes about 1 gallon
1/8 lb bacon, cut into tiny pieces (more bacon if it's lower quality since more ends up grease)
1 lb chicken, cubed bite-sized
1 bunch onions, cut small
3 cans Glory's sensibly seasoned veggies (corn, tomato and okra mixed in a can)
4 cans unseasoned black beans
Fry bacon in the bottom of the pot, blot out most of the grease with a paper-towel.
Add chicken pieces, cook until the pink is gone
Add green onions. Cook for 2 minutes.
Add caned beans and veggies, and a can of water if you want it more soup than stew. Cook until hot.
Serve with a slice of wheat bread.
Mmmm, good.
